Mint Chocolate Chip Brownies
Ingredients:
½ cup + 2 tablespoons 4.5 oz or 130g coconut oil
1¼ cups coconut sugar
¾ cups plus 2 tablespoons unsweetened cocoa powder 2.5 oz or 70g
¼ teaspoon salt
1 teaspoon vanilla extract
2 large eggs
½ cup almond flour 2 oz.
For the mint cream
¾ cup coconut cream
½ cup fresh spinach
2 tablespoons maple syrup
½ teaspoon mint extract
1 ounce dark chocolate chopped finely
For the chocolate topping
¼ cup coconut oil
¼ cup cocoa powder
2 tablespoons maple syrup
⅛ teaspoon mint extract
